Chicken liver, this so-called “red” offal as opposed to white offal (tripe, feet, etc.) is an inexpensive food that fits perfectly into a healthy and balanced diet. Low in calories and rich in nutrients, poultry liver can and should appear on menus at least once.
The liver is particularly rich in iron and vitamin A. It is also an excellent source of protein.
